Lighvan processed sheep cheese is a member of the white cheese family and is locally made in LIghvan, a village in the northwestern part of Iran. One of the effective items in the final taste of cheese is the type of milk that cheesemakers use for it. Products made from the cow’s milk have a mild flavor, regular shape, and almost hard texture. However, the types of cheese made from the sheep’s milk are softer, sweeter, and have a higher percentage of fat. The excess content of fat in this milk results in a more delicious cheese compared to other types. Lighvan processed sheep cheese is a processed product that is pasteurized twice and has more protein than the other cheeses. For making this cheese, there is no need for a ripening stage, and it is ready to be used right after getting packaged. It comes submerged in a salty fluid, and you can keep this product in the refrigerator for a couple of weeks. Since these products have a short expiration date, it’s advised to avoid buying large quantities at once. Also, we suggest keeping Lighvan cheese in containers that block light from reaching the cheese to increase its durability and quality.
